Step into a hotel lobby, and you'll find a promise of comfort and luxury. But what if that promise could also be a commitment to the planet? 

This is the story of Millennium Hotels and Resorts (MHR), a wholly owned subsidiary of City Developments Limited (CDL). For years, they've been on a quiet quest, weaving sustainability into the very fabric of their business in over 150 hotels globally, long before the world started paying attention.

Their journey begins in the kitchen, where creativity and purposeful preparation are key ingredients. Over the years, MHR has extracted reusable water from nearly 100 tonnes of food scraps. Each day, surplus buffet items find a second life as convenient, affordable takeout meals. In the UK, another 200 tonnes of food are turned into bio-fertiliser, enriching the earth instead of filling a landfill. It's a testament to the power of small changes that lead to a big impact.

But this isn't just about big initiatives. It's about the people behind the scenes, the chefs, staff and innovators who are always looking for a better way. They're starting to use AI to spot waste patterns, but they know the real magic happens when they team up with social enterprises like Treatsure to rescue surplus food. 

In the kitchen, sustainability is built into the menu itself: smaller plates to encourage mindful eating and dishes prepared based on the number of guests. Any surplus food is offered at a discount to staff and guests, a simple solution to a massive problem.

The little things add up: the absence of single-use plastic bottles in your bathroom, the water dispenser in the lobby and the motion-sensor lights that turn off as you leave the room.
